Iced Chocolate Traybake

A nice and easy alternative for a children's birthday cake. A rich chocolate traybake, topped with a thin chocolate icing. Slice into whatever sized portions you like, then top with grated chocolate, sweets or sprinkles.

Ingredients 
Makes: 25 small slices

  • For the chocolate cake traybake
  • 4 tablespoons cocoa powder
  • 4 tablespoons hot water, or as needed
  • 225g butter, softened
  • 225g caster sugar
  • 275g self-raising flour
  • 2 level teaspoons baking powder
  • 4 eggs, beaten
  • 1/2 teaspoon vanilla extract (optional)
  • 4 tablespoons milk
     
  • For the icing
  • 40g cocoa powder
  • 300g icing sugar, or as needed
  • 5 tablespoons milk, or as needed
  • grated chocolate for decoration (optional)

    1. Preheat the oven to 180 C / Gas 4. Grease and line a 30x23cm deep baking tin.
    2. Place cocoa powder in a shallow bowl; add hot water and mix into a smooth paste, adding more hot water if necessary. Set aside to cool slightly.
    3. In a large bowl, beat softened butter, caster sugar, self-raising flour and baking powder together until well blended. Stir in beaten eggs, vanilla extract, milk and cooled chocolate mixture. Spoon the cake mix into the prepared tin, smoothing the top to a flat surface.
    4. Bake for 35 minutes or until a skewer inserted into the centre of the traybake comes out clean. Leave to cool in the tin.
    5. To make the icing, sift the icing sugar and cocoa powder into a bowl. Mix in 5 tablespoons milk, adding more if necessary, to make a smooth and spreadable icing.
    6. Dip a palette knife into hot water, then spread the icing thinly and evenly over the top of the traybake; leave to set for about 20 to 30 minutes before slicing into squares. Grate some chocolate on top of each slice before serving.
